Unfortunately, it doesn't seem to be working.

It will serve DHCP to the eth0 interface just fine.  However, no action from the eth2 interface.

It does not seem "to just work". :(

How do I go about troubleshooting this?

    If you don't want to serve DNS on eth1 either, that's fine. If you want
    DNS on eth1 (but not DHCP) then do

    no-dhcp-interface=eth1

    instead.

    Yes, do that.

    There's no need, it all just works automagically.
